Ingredients
5 large onions, thinly sliced
4 tablespoons unsalted butter
2 cloves garlic, minced
1/2 cup dry white wine
6 cups beef stock
1 teaspoon fresh thyme, chopped
1 bay leaf
Salt and pepper to taste
1 baguette, sliced and toasted
1 1/2 cups grated Gruyère cheese
Instructions
In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, until caramelized, about 30 minutes. Add minced garlic and cook for another 2 minutes.
Pour in the white wine and bring to a boil. Reduce the heat and simmer until the wine has evaporated.
Add beef stock, thyme, and bay leaf. Season with salt and pepper. Simmer for another 30 minutes.
Preheat the oven to broil. Ladle the soup into oven-safe bowls. Place a slice or two of toasted baguette on top of the soup in each bowl.
Sprinkle a generous amount of grated Gruyère cheese over the bread and soup.
