This classic Thai dish combines flat rice noodles with chicken and vegetables in a flavorful dark soy sauce. Perfect for a quick and tasty meal!
Ingredients
200 grams of flat rice noodles
200 grams of chicken breast, thinly sliced
2 cups of Chinese broccoli (Gai Lan), cut into bite-sized pieces
2 cloves of garlic, minced
2 tablespoons of dark soy sauce
1 tablespoon of light soy sauce
1 tablespoon of oyster sauce
1 teaspoon of sugar
2 eggs
2 tablespoons of vegetable oil
Ground white pepper to taste
Instructions
Soak the flat rice noodles in warm water for about 15 minutes until softened, then drain.
Heat one tablespoon of vegetable oil in a large pan or wok over high heat. Add the minced garlic and sauté until fragrant.
Add the chicken and stir-fry until it’s nearly cooked through.
Push the chicken to the side of the pan and add the eggs to the center. Scramble the eggs until fully cooked and then mix with the chicken.
Add the soaked noodles, Chinese broccoli, dark soy sauce, light soy sauce, oyster sauce, and sugar. Stir everything together and fry until the noodles are fully cooked and everything is well combined.
Sprinkle with ground white pepper and adjust seasoning if necessary.
Serve hot, garnished with additional white pepper if desired.
