Quick and Easy Pickled Red Onions

Add a zesty crunch and a pop of color to your meals with these quick pickled red onions. They’re the perfect condiment for tacos, salads, sandwiches, and more. The best part? They’re incredibly easy to make and ready to enjoy in just about 30 minutes!

Ingredients:

  • 1 large red onion, thinly sliced
  • 1 cup apple cider vinegar or white vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoons salt
  • 1 cup hot or boiling water
  • Optional flavorings: a few peppercorns, a clove of garlic (halved), a sprig of fresh herbs, or a few slices of jalapeño

Instructions:

  1. Prepare the Onions:
    • Peel and thinly slice the red onion. You can use a mandoline for even, paper-thin slices or a sharp knife if you prefer.
  2. Combine the Vinegar Solution:
    • In a mason jar or a bowl, combine the vinegar, sugar, and salt.
    • Add the hot water to the vinegar mixture and stir until the sugar and salt have completely dissolved.
  3. Add the Onions:
    • Place the sliced onions into a jar or a bowl. If you’re using any optional flavorings, add them now.
  4. Pickle the Onions:
    • Pour the hot vinegar mixture over the onions, making sure they are fully submerged. Use a spoon to press the onions down into the vinegar and release any air bubbles.
  5. Let it Sit:
    • Allow the onions to sit at room temperature for at least 30 minutes. For best results, you can refrigerate them for an hour or two, which will allow the flavors to develop even more.
  6. Store:
    • Once pickled, the onions can be stored in the refrigerator. They will continue to pickle and can be enjoyed for up to two weeks.

Serving Suggestions:

  • Add to tacos or nachos for a burst of flavor.
  • Toss into salads for extra tang and crunch.
  • Place on top of burgers or sandwiches for an elevated taste.
  • Serve with grilled meats as a refreshing side.
