Lemon Garlic Salmon with Roasted Potatoes and Brussel Sprouts

Ingredients
- Wild Caught Alaskan Salmon (Best source for Omega-3’s in your diet)
- Brussel Sprouts
- Potatoes
- Oil (Olive or Vegetable Oil)
- Garlic
- Dried Dill
- Lemon
- Salt and Pepper to Taste
Instructions
- The first step is to heat your oven to 375 degrees. The potatoes will take a bit longer than the fish and the Brussel sprouts so we’ll want to get that going first. Get your potatoes and dice them into chunky pieces. Toss this in some olive oil, salt, and pepper. Put on a metal tray in the oven for 8 minutes.
- Prepare your Brussel sprouts by shopping the bottoms off and slicing them in half. Toss in a small amount of olive oil, salt and pepper, and place in the oven.
- Pull out your fish and season with salt and pepper. Add garlic, dill and a squeeze of lemon. Drizzle the salmon with some olive oil. Place in the oven with the potatoes and the Brussel sprouts for 30 minutes.
- Take it all out, plate and enjoy!
