Vegan Peanut Sriracha Noodles

A spicy, tangy, and savory delight, these Vegan Peanut Sriracha Noodles are tossed with crunchy vegetables and a bold peanut sauce for a satisfying meal.

Ingredients

  • Rice noodles or any preferred noodles
  • 1 cup matchstick carrots
  • 1 cup matchstick-cut broccoli
  • 1/2 cup sliced green onions
  • 1/4 cup crunchy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons Sriracha sauce (adjust to taste)
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • Roasted peanuts for garnish
  • Additional lime wedges for serving

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a pan over medium heat, sauté the carrots, broccoli, and green onions until just tender. Remove from heat and mix with the cooked noodles.
  3. In a bowl, whisk together the peanut butter, soy sauce, Sriracha sauce, minced garlic, and lime juice until smooth. If the sauce is too thick, add a little water to reach the desired consistency.
  4. Pour the peanut sauce over the noodles and vegetables, tossing until everything is evenly coated.
  5. Plate the noodles, and garnish with roasted peanuts and additional lime wedges.
  6. Serve immediately and enjoy the bold flavors of this vegan dish.
