Ingredients
Rice noodles or any preferred noodles
1 cup matchstick carrots
1 cup matchstick-cut broccoli
1/2 cup sliced green onions
1/4 cup crunchy peanut butter
1/4 cup soy sauce
2 tablespoons Sriracha sauce (adjust to taste)
2 cloves garlic, minced
Juice of 1 lime
Roasted peanuts for garnish
Additional lime wedges for serving
Instructions
Cook the noodles according to package instructions. Drain and set aside.
In a bowl, whisk together the peanut butter, soy sauce, Sriracha sauce, minced garlic, and lime juice until smooth. If the sauce is too thick, add a little water to reach the desired consistency.
Pour the peanut sauce over the noodles and vegetables, tossing until everything is evenly coated.
