Healthy Oat Lemon Bars

These light and creamy lemon bars are healthy treat you can't resist. They're naturally sweetened, has no butter and no flour, but still great in texture.

Ingredients
  

For the Crust

  • 1 cup ground oats (or oat flour) (100g)
  • 1/4 cup Honey
  • 1/4 cup Coconut Oil

For the Filling

  • 5 Eggs
  • 1/2 cup Honey
  • 1/2 cup Lemon Juice
  • 1 tbsp Lemon Zest
  • 1/3 cup Ground Oats

Instructions
 

  • For the crust: in the bowl, combine the ground oats, softened coconut oil and honey. Mix with the fork until the dough just comes together.
  • In a lined 8 by 8 inch (20 by 20 cm) baking pan spread the oat mixture, pressing with the fingers around the corners.
  • Bake at 350F (180C) degrees for 10 minutes. Let it cool until you make the lemon filling.
  • For the filling: in another bowl, beat your eggs, then add the honey, lemon juice, lemon zest and ground oats. Mix until well combined.
  • Pour the egg mixture over the oatmeal crust and bake at 350F (180C) degrees for 20-25 minutes, until set but still soft when gently touched.
  • Let it cool for 1 hour at room temperature, then place the baking pan into the fridge for 3-4 hours.
  • Cut in 9 equal squares (or 16 if you want smaller pieces).
  • Dust with the powdered sweetener, if you wish.
